Breakfast Quiche

I make this recipe ahead on sunday mornings and freeze the quiches in baggies. It is a great way of having a healthy, tasty , fast breakfast on those days that you only have time go "grab and go". Warm up 2 or 3 quiches in the microwave in the morning, douse with hot sauce and enjoy!

To prepare:

Preheat oven to 375.
1000 g egg white
300 g frozen spinach
1.5 c cheese, mozzarella
1/3 c red onion ,chopped
1/3 c red pepper, chopped
1 hot pepper, chopped
1.5 tsp Mrs Dash
1 tbsp sambal oolek
Thaw and drain the frozen spinach, then add the rest of the ingredients and mix together in a large bowl. spray 2 muffin tins with olive oil, and evenly spoon mixture into each muffin cup.

Bake in the oven for 20 minutes at 375. take out and let cool on a cookie rack. put into baggies and freeze. makes 12 servings.
