Green apple and shrimp salad
I derived this recipe from my favorite site epicurious, but I think the changes are superior to the original recipe, and you can get really fancy with the plating (I'll post a picture later this weekend).
For the dressing:
one cored granny smith apple
one small shallot
One clove of garlic
2 tbsp apple cider vinegar
3/4 tsp salt
Blend all the above in a heavy duty blender until pureed.
While the blender is still running, slowly add 1/2 a cup of extra virgin olive oil into the mix until the dressing is smooth and emulsified. Reserve.
For the salad:
Dice the following and mix together:
one granny smith apple
one ripe, firm avocado
one ripe, firm mango
1/3 c chopped fresh cilantro
Add one bag of cocktail shrimp (pre-cooked and thawed) - these have much nicer flavor than larger shrimps and they look pretty in the salad.
Mix the salad with 2/3 of the dressing just before serving.. If you want to the salad to look fancy, then take some whole endive leaves and fan them out, then put the salad on the leaves towards the centre of the plate. you can also put some of the extra dressing on the plate in a smear for the extra fancy look. Serve with apple chips if you want (you can make these in the oven or buy them at safeway!)
Note:
I like this recipe, because most of the dressing flavor comes from the granny smith apple - it looks like a creamy dressing but it is surprisingly good for you! I substituted cantelope one day for the mango since safeway was out, and it was an excellent substitute...
