Masala Lamb Curry

Have you ever wished that you could reproduce the meal that you ate at your favorite indian restaurant? Well, I have finally discovered a recipe that is not only healthy, but is fit for any gourmet palette around- and will easily rival any restaurant in your area.


1 tbsp coconut oil
1 sweet onion, chopped.
2 cloves garlic
1 inch ginger
500 gms stewing lamb
1 can coconut milk (low fat if you are being calorie conscious- the calorie counter below has been calculated with low fat coconut milk)
2 fresh tomatoes, chopped in 1 inch pieces
1 tbsp Garam Masala (this is IMPORTANT! can be found at a health food store, or in Calgary at "The Silk Road Spice Merchant" - which is always the best place for real, fresh spices, and is a great place for gift ideas.)
1 tsp cayenne powder (skip or reduce this if you don't like spicy food)
1/2 tsp tumeric
1 tsp cumin
1 tsp fennel seeds
1/2 tsp curry powder (can be skipped to make it less spicy)
Juice of half a lime
2 tbsp fish sauce
Salt to taste

To Prepare:

In a large frying pan, fry the first 4 ingredients until aeromatic, then add the lamb and sear for about 5 minutes. Then add the coconut milk and the tomatoes and additional spices, and reduce to a simmer for 30 minutes.

Serve with your favorite grain.  Serves 4
