Pick Dellaio

This is a recipe that I got from a restaurant in Texas- they made the best chicken that I have ever had- and I am actually not a fan of chicken- especially boneless skinnless chicken breast- I feel that it lacks taste and tends toward dry. But I promise you, you will love this recipe!

it only takes 5 minutes to make, but it is important to pre-make the salsa the night before.

Prepare the following the night before you make this meal:

Mix together:

2-4 fresh jalepenos  (depends on how hot you want the salsa)
6-8 Diced, vine ripened tomatoes
Juice of 2 limes
Juice of 1/2 lemon
1/4 cup diced red or sweet white onion
3-4 tbsp chopped cilantro
1 clove of garlic, pressed.
salt to taste
2 tbsp olive oil
 

Let the above ingredients marinate overnight in the fridge. Then, before you go to work,put some boneless skinless chicken breast ( enough for 4 people) into another bowl and drain the "salsa juice" into it. cover and return both bowls to the fridge.

To cook:

Pan fry the chicken with the marinade- covered. add a bit of water if the marinade dries up too fast.once cooked, cover the chicken with shredded or sliced low fat mozza, or monterey jack cheese. serve with the cold salsa mixture and enjoy! serves 4.

Notes:

This is an extremely healthy recipe- there is less than 1/2 tbsp of olive oil per serving, and very little fat in the cheese if you do the low fat option- but don't try to make it lower fat and skip out on the cheese- it really does make the dish! the only trouble I have with this dish is not going back for seconds because it is so good!
