Poached salmon with Basil and Thyme Aioli

This recipe sounds fancy, but it is ridiculously easy and incredibly tasty. I have made it 3 times in the last 2 weeks, because it is so easy to whip up, and it makes for great leftovers, since the poached salmon is good hot OR cold.

Salmon is in season right now, so either buy a whole one and figure out how to fillet it yourself, or buy the pre filleted salmon. Fresh salmon will always taste a thousand times then the frozen steaks, so while it is in season, treat yourself...

For the Fish:

In a deep sauce pan, mix together 1 cup dry white wine ( a cheap chardonnay will do), one cup of water, a few sprigs of cilantro, slices of one shallot, and a few sprigs of thyme. bring to a boil.

Cut the fish fillet into person sized portions and place in the pan. ladle the sauce over them and turn to med. heat, for ten minutes (until the fish is just past the pink- raw look)

For the Aoli: (basically, just a fancy way of saying "mayo, and stuff")

To one cup of mayo lite,  add in one tbsp of grainy dijon mustard some chopped up basil and thyme, and squeeze in 1/3 of a lemon.  stir.

TADA!  You are done and probably  ready way before dinner is to be served. now you can relax and try not to drink the entire remainder of the white wine you opened...

To serve:

Place the salmon steaks on a plate and top with the aoli.
Serve with green beans, cooked snap peas or asparagus on the side.

The leftovers are fantastic for a healthy lunch that doesn't have to be warmed up... be sure to make extra...

Salmon is a low calorie option, with all those really good fish oils that help to lower your cholesterol.
If you keep the mayo low fat, it makes a great accompaniment choice and there is enough flavor in the aoli and the salmon itself that salt is not necessary, so if you are trying to cut your salt intake, this is the recipe for you.
